Coco-Lemon Rice Recipe
I am a happier person when I eat rice! And when I eat just right amount I can still stay fit and enjoy this delight. Rice is a sweet taste according to Ayurveda, it is made up of earth and water elements and so basmati rice great for all doshas! Or you can use it as a base and then serve with warm fruit compote.

Ingredients
- 1 / 2 cups Rice
- 1-1/2 Vegetable Broth or Water
- 1 tsp Ghee
- 1/4 cup Coconut Nilk
- 1 Lemon, Grated for Its Zest and Juiced
Instructions
- Melt the oil and add rice, water/broth in a pot and bring to a boil
- Cover, reduce heat to low and cook for 15 minutes at a low simmer
- Stir in the coconut milk and cook another 5 minutes
- Remove from heat and steam for 10 minutes
- Stir in lemon juice to taste and grated lemon peel
- If you are using it as a side dish to lunch, you can season with herbs and pink salt to taste
- If you are serving sweet, just mix with your usual porridge ingredients like nuts, seeds, spices except oats
